• The Head Butcher plays a key role in driving the business objectives for the Donnybrook Fair Group within his/her department.
Essential Attributes:
• 2+ years experience in a management position
• 2+ years experience working with raw meat as a butcher/chef.
• Full HACCP training.
• Extensive knowledge of meat, meat preparation and display.
• Extensive cooking and catering knowledge (To advise customers)
• Excellent Customer service and selling skills
• Ability to logically place accurate product orders.
• Ability to track Budget Expenses, assign pricing and sustain margins.
